The 2,000 olive trees—varieties typical of Umbria, such as Moraiolo, Leccino, and Frantoio—are pruned according to time-honored local tradition, in such a way that a duck could fly through them, allowing sunlight to reach the branches.
In October and November, our entire family and staff devote themselves to the olive harvest. The olives are picked by hand and cold-pressed, resulting in an oil with an intense aroma and a balanced flavor, with zero acidity, that embodies all the authenticity and genuineness of our region.
